Chipotle Bean Chicken Stew

Looking for weekday dinner ideas? Here’s another good weekday recipe for you all. It’s not super fancy in any way but the taste and flavors are just mouthwatering. It is full of delicious veggies, tender chicken, spices, oh, and of course those beans and tomatoes!

I got this recipe from my friend and I just made few changes and added more veggies and beans in it to make it more scrumptious and divine. We all look for some easy chicken recipes, and this recipe falls under this category easily. It’s simple and easy to make and kids love it too.

You can make this recipe in the slow cooker too. It’s a slow cooking procedure where you cook all the ingredients in simmer for more flavors and taste. And it is recipe which will warm you up if you've been outside for a football game, raking leaves, pumpkin patching, or any of the other outdoor activities people do in the fall.

This recipe serves up to 6 servings

Preparation Time: 10 minutes

Cooking Time: 1 hour 10 minutes or 6-7 hours if you’re using slow-cooker



Ingredients –
  • 1 Tbsp. vegetable oil
  • 2 lbs. boneless, skinless chicken thighs, cut into 1-1/2 inch cubes
  • 2 large carrot, sliced
  • 1 can (14.5 oz.) chopped tomatoes
  • 4 stalks celery, diced
  • 1 lb. potatoes, peeled, if desired, and cubed
  • 1 cup water
  • 1 Tbsp. Knorr Chicken flavor Bouillon
  • 1 (15 oz.) can great northern beans, drained and rinsed
  • 1 Knorr Onion MiniCube, crumbled
  • 1 Knorr Garlic MiniCube, crumbled
  • 2 large green, red and/or yellow bell peppers, cut into 1-inch chunks
  •  2 Knorr Chipotle MiniCubes, crumbled
Method –
  1. Heat oil in large deep skillet over medium-high heat and brown chicken in 2 batches, stirring occasionally. Add carrots and next 5 ingredients and bring to a boil. Reduce heat and simmer covered 1 hour.
  2. Add peppers and potatoes and simmer covered 1 hour or until chicken is thoroughly cooked and all the vegetables until they are very tender. Stir in Knorr Chipotle MiniCubes. Garnish with chopped cilantro and chopped avocado. Serve with hot cooked rice and lime wedges.

P.S. If you are using slow cooker. Combine all ingredients in a slow cooker. Cook on low 6-8 hours or until potatoes are tender and chicken is cooked through.
