What’s For Dinner Tonight?

Ever wondered what will you cook for the dinner everyday? It is really a complex question that arises in the mind of any lady be it working or a housewife. Cooking dinner every night can be quite difficult when you don't know what to cook actually or you are not ready with the required ingredients.

Offcourse for busy working moms it becomes quite hectic after a long day of work to figure out what to serve in dinner. Always eating outside food is not an easy thing to do. Looking for a restaurant where you can get food of your own choice and wherein reservations are available is at times a challenge. 

In my previous postings I have been posting dinner recipes out of which my favorite two are Simple and Easy Dinner Ideas For Family wherein I had shared dinner ideas separately for two people and kids which was quite well appreciated by readers.

Another one is Crustless Simple Quiche Recipe that is a great dish to be served at dinner. It is made with unbaked pastry shells, different veggies e.g. spinach which is rich in vitamin K, C and B6.
This time also I have come up with such an easy dinner recipe which was loved by all in my family.
The name of this dinner recipe is Pan-Seared Salmon with Kale and Apple Salad served as dinner rolls with combination of apple, cheese, almonds and seasoned with pepper which adds a tangy taste to it.

Pan-Seared Salmon with Kale and Apple Salad Recipe

Total Time: 40 min Prep: 20 min Inactive: 10 min Cook: 10 min Yield: 4 servings Level: Easy


Ingredients:

·        4 whole wheat dinner rolls
·        Freshly ground black pepper
·        Four 5-ounce center-cut salmon fillets (about 1-inch thick)
·        3 tablespoons olive oil and fresh lemon juice
·        3 tablespoons toasted slivered almonds
·        Kosher salt
·        1 bunch kale, ribs removed, leaves very thinly sliced (about 6 cups)
·        1/4 cup dates, finely grated pecorino
·        1 Honeycrisp apple

Directions:
  1. Firstly you will have to make sure salmon is brought to room temperature 10 minutes before    cooking it.
  2. Simultaneously, take a large bowl and keep on whisking together 2 tablespoons of lemon   juice and olive oil with 1/4 teaspoon salt. Then add the kale, toss it to coat and let it stand there for about 10 minutes.
  3. While the kale is kept on the stand, cut apple into the size of matchsticks and dates into thin slivers. Now add the apples, dates, cheese and almonds to the kale. Spice it with pepper, toss well and set aside.
  4. Dash the salmon all over with 1/2 teaspoon salt and some pepper. In a large nonstick skillet over medium-low heat remaining oil. Raise the heat to medium-high. Keep the salmon, skin-side up in the pan. Cook it on one side for about 4 minutes till it turns golden brown. Make sure the fish is cooked well until it feels firm to the touch within 3 minutes it is done.
  5. Finally divide the salmon, salad and rolls equally among four plates.

This is itself a unique recipe which contains the nutrition of apple and kale salad with a crunchy, tangy and sweet taste in it.

Pork Chops with Scalloped Potatoes Recipe

Being a busy mother sometimes I really don’t have enough time to spend in the kitchen to prepare dinner. So I prefer to cook an easy dinner recipes pork chop dish is one of them. The pork chop recipe can be easily made with the ingredients on hand.

Pork chops can be served as one of the great meals any time of the year be it summer or winter. The pork chops is made of wonderful flavors that it gives absolutely fantastic taste to any ordinary recipe.


Pork Chops with Scalloped Potatoes Recipe is one of my favorite and easy pork chop recipe which is made up of the ingredients which are readily available at home anytime. None of these ingredients are hard to find if you visit any nearest store.

Friendship Day Celebrations with Meatloaf

This friendship day which was on August 3, the whole day I went out for shopping with my friends, and after coming back home I thought of celebrating friendship day with my husband and two little lovely kids.

An amazing idea came to my mind why not to make quick and easy recipe for dinner as I was already tired the whole day.

Like chicken, meatloaf is also a versatile dish as it can be made with various kinds of meat and different binders such as breadcrumbs, oats or cereals. It all depends on what all your food preferences are. In order to make your meatloaf more nutritious some shredded cheese and veggies can be added to it. Every day so many different variations can be done to this dish that people around you will relish eating it and won’t get bored.

This easy recipe is for those who want to try something new with meatloaf. Magical flavor of jalapeno peppers and monterey jack cheese will surely not keep  the meatloaf recipe boring.  You can use a combination of beef, ground pork or ground veal and try other seasonings and sausages of your choice to make it more flavorful.


Easy Spicy Meatloaf Recipe

Ingredients:
  • 1 medium onion and green pepper, finely chopped
  • 1 1/2 pounds ground beef & 1/2 pound ground pork
  • 1 cup uncooked rolled oats
  • 2 eggs, beaten & 1 cup milk
  • 1 small can jalapeno peppers & spicy tomato sauce
  • 2 1/2 teaspoons salt &1 teaspoon pepper
  • 1 small package sliced Monterey Jack cheese

Directions:
  1. Take a large bowl and combine together ground beef and ground pork.
  2. Add finely chopped onion and green pepper to the above made mixture.
  3. Add the eggs, oats, eggs, milk, pepper and salt to meat mixture properly and mix it well.
  4. Place 1/2 of the mixture into a loaf pan.
  5. Place 3 or 4 clean seeds taken from jalapeno peppers, on top of the meat and then top them with Monterey Jack cheese.
  6. Now place remaining ½ of meatloaf mixture on top of the cheese and press them firmly into pan to form loaf, simultaneously sealing peppers and cheese into meatloaf.
  7. Bake at 350 degree F oven for about an hour. Remove it from oven and pour tomato sauce over its top, then again bake it longer for more 15 minutes.

This is quite an easy meatloaf recipe to make and its taste is very moist and stimulating. It can be served with mashed potatoes, gravy and cornbread just for a meal that will always be remembered by your loved ones.

Recipe for Chicken - Smokehouse Bacon Chicken Carbonara

What to cook for dinner? This thought often comes to my mind.  In my family everyone loves to eat any type of dish where chicken is the main ingredient.  You might think that cooking chicken at dinner time is too much time-consuming but actually there are plenty of quick and easy recipes for chicken available which can help you to make a substantial and tasty chicken dish for the entire family.

If there is leftover chicken in the refrigerator then you can easily think of making a chicken salad with it in just five minutes. For salad take this leftover chicken and add cheese cubes, cherry tomatoes, sauces and add your favorite salad dressing and serve it at lunch.

I generally prefer to use chicken breasts as I feel  chicken thighs are smaller in size as compared to chicken thighs which unnecessarily increase the number of chicken pieces in any recipe.

Amazing Spaghetti & Meatball Recipe

Those who are new to this recipe let me first explain the basic facts about meatball and spaghetti. Meatballs are made up of ground meat properly minced and then filled with other ingredients such as chopped onions, garlic, herbs, spices, pepper. It is one of the favorite dishes in Sweden cuisine and across Middle East countries. However every part of world has its own way for making the meatballs. Beef, pork and even lamb can be used for making meatballs.

For making meatballs in Greek cuisine ground meat is mixed in finely diced onion and mints. French used to mix shredded cheese with the meat. Chinese prefer to eat them in larger size with pastas and noodles.  
The origin of the meatball was from ancient time when farmers working out in lands started mixing any type of meat with nuts, fruits in order to give it a better taste. Also in those times no freezing system was available so they used to preserve the meat with spices, herbs .This way these balls of meat could last for longer time. It was considered a leftover dish made from cooked meat that is shredded by hands and then mixed with spices.


Spaghetti is an Italian pasta with a cylindrical shape and thinner in size. It is made up of semolina and water. This is a main ingredient in the pasta menu and is often served with tomato sauce.

A Wonder Food - Healthy Guacamole Recipes

Avocado is a wonder food. It has so many benefits which cannot be explained. It is very good for your health, eyes, hairs etc. I have seen people eating one avocado a day to build their immunity. It has zero cholesterol and full of vitamin A, C, Calcium, Vitamin D, Iron, and Vitamin B6 etc.


To make sure that my kids eat enough avocado, I have learned the effective as well as different uses of guacamole recipe. With this I make sure that I do not repeat any dish as well as my kids get proper nutrition’s. If you have a full time job along with taking care of your kids then, these are some recipes which are tailor made for you. Try them and you will actually thank me.



Grilled cheese bacon guacamole sandwich- I always made this sandwich when my younger one is throwing tantrums. I think, this sandwich calms him down for some reason. Or perhaps the melting cheese melts his anger. All you have to do is to take a bread (normal or 5 grain), spread some guacamole on it, put some cooked bacon and top it up with shredded cheese. I use Mozilla cheese in this. Put it in a toaster and wait for 3 minutes. The sandwich is ready to be served.

 Guacamole and salsa chips- now, who does not know about this dish. This dish is adored by people all over US. Perfect for hunger pangs and also can be served in a party or at any game night. You can make it hot or just little tangy. It really depends upon your personal taste. You can use tomato, onions, jalapenos etc. while making a guacamole recipe.


  

Mexican BLT with guacamole- I like to introduce my kids to all kind of culture as well as their food. Once my Mexican friend shared this recipe with me and I have just amended this recipe with a guacamole because my kids do not like spicy food. This foot long has the goodness of chicken, vegetables and of course avocado.  You can even put cheese in it if desired however, it does complicate the flavor little bit. Guacamole devil eggs- devil eggs is such a perfect appetizer for Saturday evening. I usually make this when my husband has his friends over for the cards. I mean I keep making them and they keep eating without realizing how much they have eaten already. But, I guess men will be men that ways. Guacamole brings a new twist to our humble devil eggs. Try it, simply add the avocado paste to your mixture and see the magic.

Today, I am in a mood for making some more experiments with avocado and you never know I may come up with something called “Sylvia special-guacamole”. Sound so fun, isn’t?

The types of dinner I like- Quick & Easy

Yes, it is true that dinners are very important meal and it’s the only meal which we eat with the family etc. I know and I am ready to accept everything however, it is also true that every evening we come back home tired and exhausted. No one wants to spend lots of time in the kitchen and grill themselves further
.
Over a period of time, I am collecting some quick recipes which I have kept in my cupboard under the sticker of- quick dinner ideas. Funny? No I guess it’s practical and today I will be sharing one recipe from this box only. I hope you will like this recipe as much as I do and enjoy it with your family.

The recipe which I am sharing with you today is- Bubble Pizza

Ingredients-
  1. 2 cans of buttermilk biscuit
  2. 1 jar of pizza sauce or you can also use homemade red sauce
  3. 3 cups of Mozilla cheese
  4. Pork and chicken topping (actually use any topping you like and is you are a vegetarian, use veggies)
  5. Cooking spray for layerin
Method-
  1. Pre-heat the oven to 400 degrees.
  2. Cut the buttermilk biscuit into quarters. Take a big bowl and mix biscuits with pizza sauce, half Mozilla cheese, pork and chicken topping. Make sure that the biscuits are well covered with sauce.
  3. Now, spray the oven try with cooking oil. Spread it well and transfer the biscuits in the tray. Top it up with Mozilla cheese.
  4. Bake it for about 30-35 minutes or until the biscuits are not done. Do not peek before 25 minutes, it will kill the heating air of the oven.



You will see that this dish will become your family favorite. Most of my family members were skeptical in the beginning about this dish but they got the hang of it. Now, they specially demand this dish from me once a week and honestly I am very happy to oblige.

Personally, I feel that quacking for your loved one’s is important however spending time with them is more important.
